Manual, starting from the end of September

Winemaking

Soft pressing of the grapes and musts refrigeration at 5°C for 10 days. The subsequent alcoholic fermentation is carried out by selected yeasts working at 16°C for two weeks

Aging

In stainless steel tanks in contact with the lees for 4 months. Followed by aging in the bottle for another 3 months
