The Olivini Family promotes the use, also in Italy, of closing the bottle with a Stelvin closure (Metal closure with a screw thread). This is the closure of excellence for young and aromatic wines, ensuring perfect storage and freshness. It is a solution that allows to eliminate all the defects related to cork closure, there is no risk of premature oxidation and ensures practicality and environmental sustainability.

Winemaking
Manual harvesting in crates, soft pressing, partial cryomaceration for 12 hours at 5°C, alcoholic fermentation carried out by selected yeasts at controlled temperature.
Organoleptic analysis
Straw yellow color with greenish reflections, pronounced minerality with floral and sometimes citrus aromas; freshness and sapidity characterize the aromatic and decisive taste.
