Harvesting Method
Mechanical harvesting, gently done in full respect of the grape integrity with quick transfer to the cellar. From mid to late September.
Bottling
In February, with subsequent spring aging in the bottle.
Winemaking
Gentle pressing and respectful treatment of the grapes in an inert environment with subsequent selection of the best juice. Fermentation in stainless steel at a controlled temperature of 16°C.
