WINEMAKING
Soft pressing, fermentation at controlled temperature in inert atmosphere. Aging of a part of the wine in French oak tonneaux for 6 months and the other part in steel tanks with long refinement on the lees. Malolactic fermentation not carried out.
ORGANOLEPTIC CHARACTERISTICS
Intense straw yellow color with golden reflections. Aromas of fruit with hints of peach and apricot, honey, and spices; finely mineral. Intense on the palate, savory, wide and structured with a long fruity persistence.
PAIRINGS
Seafood, spiced white meats, medium-aged cow cheeses and herb-flavored goat cheeses.
