WINEMAKING, AGING, AND OTHER CURIOSITIES
The cherry tree ("serese" in the local dialect) is well-suited to evoke spring; a season of scents, freshness, vivacity, and awakening of the senses. Sensations and emotions that a glass of Serése will continue to offer throughout the year.
Cooled and washed to reduce oxidation and contamination, the grapes are cold-pressed in the absence of oxygen. Bâtonnage on the lees in pre-fermentation and on the yeasts post-fermentation, the wine is aged exclusively in stainless steel tanks.
