TASTING NOTES

Light straw yellow with brilliant reflections, a luminous transparency crossed by yellow and green notes. An exuberant olfactory experience: floral, fruity, and mineral. The bouquet is shared by a sweet note of fruit tree flowers, the same scent of the flowers from which it takes its name: cherry blossoms saturating the air in our countryside in spring; then sage, thyme, grapefruit, pineapple with a hint of minerality. In the mouth, its "lemony" sweetness encourages continuous drinking, the interplay of savory-acidic-soft sensations reappears several times in a swing that becomes the hallmark of its taste and aroma persistence.

PAIRING SUGGESTIONS

Let's pair it with freshwater fish dishes with persistent flavors and dry meats such as pike, whitefish, sardines; also enjoy it with fresh cheeses like a Piedmontese robiola, a three-milk toma, fresh goat cheeses and stracchino also paired with eggs, savory pies, and new salami as tradition dictates for Easter Monday picnics.

WINEMAKING, AGING, AND OTHER CURIOSITIES

The cherry tree ("serese" in the local dialect) is well-suited to evoke spring; a season of scents, freshness, vivacity, and awakening of the senses. Sensations and emotions that a glass of Serése will continue to offer throughout the year.

Cooled and washed to reduce oxidation and contamination, the grapes are cold-pressed in the absence of oxygen. Bâtonnage on the lees in pre-fermentation and on the yeasts post-fermentation, the wine is aged exclusively in stainless steel tanks.
