WINEMAKING, AGING, AND OTHER CURIOUS FACTS

Firmamento was born in 2014, when, thanks to the cool summer, we harvested grapes particularly rich in acidity and with low alcohol content. This occurred especially in a vineyard, the least sunny of the company, where the view of the firmament is best at night.
In line with the company's spirit, we decided not to alter the characteristics of the grapes, but rather to enhance their essence. We balanced the natural acidity of the finished wine by leaving a fraction of unfermented sugars.
In the following years, we worked in the vineyard to obtain grapes with chemical and physical characteristics for a very fresh and low-alcohol wine.

I'm sorry, but "fivi" is not an Italian word. It doesn't have a specific meaning in Italian. It could be a typo or a misspelling. If you have more context or information, I'd be happy to help you further.
