TEMPESTA
This Classic Method Brut Sparkling Wine with a golden yellow color and fine persistent perlage is obtained from the selection of the best grapes from the "historic" vineyards. A wine that is the result of the best expression of an extraordinary terroir. Potential and strong minerality are the characteristics that distinguish this classic method, elegant and harmonious with remarkable personality; intense fruity notes are combined with pleasant fragrances of vanilla and yeast that persist in the mouth for a long time. Ideal bubbles for aperitifs, light fish-based appetizers, shellfish, and seafood. Excellent for celebrating the most important occasions.

WINEMAKING
The hand-picked grapes in small crates rest for 24 hours in a refrigerated cellar at a temperature of 8 °C to transfer all the aromatic content from the skin to the pulp. Subsequently, the grapes are destemmed and gently pressed to obtain the alcoholic fermentation of the first fraction (only 45% of the weight of the grapes). After natural clarification, the must is transferred to thermo-conditioned steel tanks or, for some batches, to small oak barrels, where the alcoholic fermentation begins at a temperature of 14 °C, carried out by the natural yeasts present on the skins to impart the typicality of the grape variety. Subsequently, the temperature is kept constant at 17 °C until complete fermentation. Then the sparkling process takes place with selected yeasts, which occurs in the bottle. The long bottle aging of about 24 months takes place in the cellar at a constant temperature of 12 °C. Finally, the bottles are placed on pupitres and, through remuage, they are clarified before being disgorged à la volée.
