Selva Capuzza - Passito Lume
Benaco Bresciano Passito IGT Like the flame of a torch. It comes from the same grape variety as Campo del Soglio, until 2007 called Tocai Friulano; it is a native variety, now called Tuchì, present in different clones in the oldest vineyards.
It is a white berry grape with a medium-small cluster, characterized by a small berry and a thin skin; it ripens early and the must has a good sugar content and a rather low acidity.

The drying process occurs naturally on the attic above the winery's portico without air conditioning or humidification, with the air only kept in motion by fans during hot days.
The grapes are constantly monitored during the drying process; any berries developing traces of mold are immediately removed.
Once the desired dehydration level is reached, the grapes are gently pressed and vinified in stainless steel at a controlled temperature.
When the wine has reached the optimal alcohol content and sugar level, the masses are cooled to stop fermentation, then clarification and filtration processes are carried out (usually without malolactic fermentation).
After a short maturation in tanks for a few months, the bottling process takes place.
Lume is a wine in search of finesse, of balance between acidity and sweetness.
