 Area of Origin
The company vineyards dedicated to the production of this wine are located in Valtènesi, on the hills of Soffaino in the area called "Béspoi," which means an area rich in medlars. This name, which using local slang was given to identify this locality, takes inspiration from the rich typical vegetation of the place.
The hills of Soffaino are located in the area of ​​Garda Bresciano on the western shore of Lake Garda, between Lake Lucone, a prehistoric basin that has become a UNESCO heritage site as an important archaeological site, and the Sovenigo Lakes, which represent the best example of an intermorainic basin of Garda. In the months of July and August, they offer a unique spectacle when the waters are covered with the pink of lotus flowers.

Grape Variety
Groppello (prevalent %), an indigenous grape of Valtènesi, Marzemino, Barbera, Sangiovese, and Rebo.

Production
From grassed inter-row vineyards, worked under the row, cultivated without synthetic chemical products using beneficial insects in the vineyard.

The productivity is equivalent to 60 quintals per hectare.

Harvest and Winemaking
Manual harvest in small crates in accordance with the CCPB programmatic document.
Winemaking obtained through "cap raising," meaning that the crushed grapes are sent to the tank as in normal red winemaking, and as soon as the must reaches the desired color intensity, it is completely separated from the skins.

Then, a second fermentation is carried out, using the natural method of sparkling wine in autoclave (Charmat method) with slow refermentation at low temperature.

From petal pink to cherry with ruby reflections.

Aroma
Fine, intense, with floral and fruity notes of strawberry.

Taste
Sparkling wine with a delicate bubble, dry, fresh, finely savory, with pronounced salinity and a light almond aftertaste.
