The fermentation occurs in the bottle where yeasts and grape fructose are added. The contact with the yeasts lasts about 12-15 months, after which the process of remuage begins, which is the rotation of the bottles that allows the inert lees to concentrate on the bottle cap, where they will be frozen and expelled, allowing the bottle to be corked again with the classic mushroom cork.
