Winemaking: after a careful selection of the best grape bunches, with low yields per hectare, a light pressing is carried out, from which only the free-run juice will ferment in steel containers where it will rest until it is bottled for the secondary fermentation.
The final pressure obtained inside the bottle is less than 5 atmospheres, which determines its distinctive gustatory softness.
After a maturation period of at least 24 months, the bottles undergo riddling and disgorging operations before being packaged and put on the market, at least two months after this operation.
