Taste: full, enveloping, and structured.
In the mouth, it is direct and full of character. A note of minerality is perceived, supported by a characteristic sapidity. The perlage is very fine and persistent.
Alcohol content: 12.5% vol.
Winemaking: after a careful selection of the best clusters, with low yields per hectare, a light pressing is carried out, from which only the free-run juice will ferment. After a brief maceration on the skins, the juice will ferment in steel containers, where it will rest until bottling for the secondary fermentation.
After a maturation period of at least 30 months, the bottles undergo riddling and disgorging operations before being packaged and put on the market, at least two months after these operations.
