Grapes: Pinot Noir 60%, Chardonnay 40%.
Alcohol content: 13%vol
Vineyards: in Olfino di Monzambano, on stony, calcareous soil, occasionally clayey, typical of the morainic hills south of Lake Garda. The vines (both Pinot Noir and Chardonnay) are trained using the spurred cordon method, with a yield of approx. 90q/ha.
Harvest: manual, early, with strict grape selection.
Fermentation: after a soft pressing, the free-run juice is fermented at a controlled temperature (17°C). Sparkling process: refermentation in the bottle, according to the traditional method, and aged on the lees for at least 60 months.
Color: deep straw yellow with golden reflections, abundant foam, fine and persistent perlage.
Aromas: intense, with hints of bread crust and white flowers. Very elegant.
Flavors: dry, savory, well-structured.
Service temperature: 8-10°C.
Pairings: Excellent as an aperitif and for all celebrations. Its great elegance allows pairing with shellfish and fish. Its remarkable structure also makes it perfect for accompanying red meats and cheeses. Ideal for a dessert.
