Tasting notes
Bright straw yellow with intense and creamy perlage.
On the nose, it is rich with notes of citrus, yellow apple, and loquat. The oxygenation in the glass releases floral aromas and crunchy fruit hints, along with touches of aromatic herbs. On the palate, the perlage spreads all its creaminess. Soft with a balance between the savory acidic component and a fragrant finish. Perfect pairings as an aperitif, with “sushi”, raw fish or meat, or flavorful and tasty appetizers.
The Sebastian Brut is named after the founder of Cascina Maiolo, Notary Sebastiano Maioli, remembered on the keystone of the manor house door. The early harvest of the grapes, suitable for giving the must more acidity, and the careful low-temperature vinification allow for the crafting of a wine destined to undergo refermentation in autoclave with aging on the lees for several months, resulting in a cuvée of great fragrance in aroma and with a delicate perlage.
