Manual, from early to mid-September

Winemaking

Gentle pressing of the grapes and skin maceration at low temperature for about 6 hours. The subsequent alcoholic fermentation is carried out by selected yeasts which work at 16 °C for two weeks

Aging

In stainless steel tanks in contact with the lees for 3 months. Followed by bottle aging for another 2 months
