This "COBIO" wine comes from the homonymous plot of land, light and rich in fossils in Botticino Mattina. The vineyard is located at 500 meters above sea level. Here, the ideal microclimate and the constant breeze that prevents moisture stagnation, combined with the remarkable agronomic experience of the owner Benedetto, allow for a low environmental impact pest control and harvesting when the grapes are perfectly ripe, significantly reducing the use of added sulfites in the wine.
BLEND: 40% Barbera, 30% Sangiovese, 20% Marzemino, 10% Schiava gentile
WINEMAKING: Destemming, soft pressing, fermentation and maceration with the skins for about 20 days
AGING: 24 months in 15hl French oak barrels
MATURATION: 6 months in the bottle
COLOR: Intense ruby red, almost "impenetrable" AROMA: Vinous and intense, ethereal with spicy nuances
TASTE: Dry, robust, full and harmonious with a long persistence SERVING TEMPERATURE: 18-20 degrees Celsius
