Marzemino, Groppello and Barbera
The vineyards are located in the Picedo area in the municipality of Polpenazze del Garda, covering an area of 3.90 hectares with a planting density of 6500 vines per hectare, trained in a simple Guyot system with a yield of 70 quintals per hectare. The soils are of morainic origin, predominantly sandy and calcareous.
The grapes are harvested by hand starting from the first decade, until the end of September depending on the ripening period.
After destemming and soft pressing, the grapes are placed in stainless steel tanks where alcoholic fermentation begins without the use of selected yeasts. After a 14-day maceration, the must is separated from the skins and placed in truncated cone tanks where alcoholic fermentation is completed and malolactic fermentation occurs entirely naturally. After aging for 4 months, the wine is bottled.
