Podere Dei Folli - "Sofai" Valtenesi
Area of Origin
The vineyards owned by the company dedicated to the production of this wine are located in Valtènesi on the hills of Soffaino in the area called "Sofaى", which means under the beech trees. In the shade of these trees, the local farmers used to have lunch in the summer months during the midday break and let the oxen rest.
The hills of Soffaino are located in the area of Lake Garda in Brescia on the western shore of Lake Garda, between Lake Lucone, a prehistoric basin that has become a UNESCO heritage site for its archaeological importance, and the Sovenigo Lakes, which represent the best example of an intermorainic basin of Lake Garda. In July and August, they offer a unique spectacle when the waters are covered in the pink of lotus flowers.

Groppello (predominant %), an indigenous grape of Valtènesi, Marzemino, Rebo.
Production
From grass-covered vineyards, worked under the row, cultivated without synthetic chemicals using beneficial insects in the vineyard.
Productivity is 60 quintals per hectare on morainic soils, which give the wine pleasant salinity and fruity characteristics.
Harvest and Winemaking
Late manual harvest in small crates, subsequently used for drying the grapes in the attic.
Traditional winemaking according to the CCPB regulations.
Fermentation at controlled temperature, using dried grapes that allow for a full-bodied wine with an intense color.
Aging for about 1 and a half years in stainless steel tanks and 12 months in French oak barrels.

15.00% vol.
Color
Intense and brilliant ruby red.
Aroma
Winey, fruity with notes of wild berries, blackberries, raspberries, and spices.
Taste
Round and balanced with excellent organoleptic structure and tannins well integrated with the fruit component.
Service and Pairing
Serve at 15° – 16°C with kebabs, braised meats, grilled dishes, cured meats, and flavorful cheeses.
