IN THE CELLAR Vinification: manual harvesting of the grapes and destemming, fermentation at controlled temperature for about 20 days in steel tanks and in contact with the skins.
Frequent and gentle pumping over is carried out to avoid damaging the skins during maceration, and after fermentation is complete, the skins undergo a soft pressing to give complexity and structure.
