The vineyards for Groppello are located in the Picedo area in the municipality of Polpenazze del Garda, covering a little over three hectares with a planting density of 6,500 vines per hectare, trained with a simple Guyot system and yielding 70 quintals per hectare. The soils are of morainic origin, predominantly sandy and calcareous.
The grapes are harvested by hand from the first decade of September.
After destemming and soft pressing, the grapes are placed in cement tanks where they start alcoholic fermentation without the use of selected yeasts. After maceration for 8/10 days, the wine is separated from the skins and transferred to amphorae where it completes fermentation slowly and naturally to enhance the fruity components. After aging for 3/4 months, the wine is bottled.
