Sabbioso Sangiovese IGT

This Sangiovese, vinified in purity, is the wine that represents us the most... or rather that represents Gigi and his personal interpretation of the territory, which he wants you to experience through his wines! He doesn't hide the fact that Sabbioso is his favorite wine!
This red wine of character is produced with Sangiovese grapes from the vineyards on the hill overlooking the hamlet of Castrezzone, unique for its exposure and the soil characterized by stones and sand.
The grapes, after careful selection, are harvested, crushed, and left to ferment for about 18 days; subsequently, the wine undergoes an aging process of about 18-20 months in Slavonian oak barrels with a capacity of 5 Hl. It has a lively ruby red color with slightly garnet reflections.
Its aroma, particularly ethereal and warm due to the good alcohol content, leads to a scent of very ripe fruit, with plums and marasca cherries standing out: an effect of the long maceration on the skins.
With aeration, a good scent of slightly spicy wood emerges, which, within a few minutes, tends to prevail without hiding its fragrance and the light scent of Mammola typical of Sangiovese.
In the mouth, it explodes with an intensity of warm and vinous aromas and aftertastes accompanied by a soft tannicity and correct acidity.
Once bottled, it can undergo further aging for 6/8 years depending on the vintages.
TIPS
It should be served at an optimal temperature of 18°C and is an excellent pairing for grilled meats, braised dishes, roasts, and for the traditional local spit-roasted meat of Brescia.
