Red Barrel-Aged Wine "Indomito"
This wine is produced with Marzemino and Rebo grapes, hand-picked, laid in crates, and left to dry for about a month. The grapes are vinified using traditional red winemaking techniques, fermentation in steel vats, followed by aging in small oak barrels for one year. The wine is then bottled and left to mature for another 12 months. The name "Indomito" evokes a strong and generous stallion that was used for work in our lands in the early 1950s. Color: velvety red. Aroma: intense with sweet notes of forest fruit jam, slightly spicy and vanilla. It pairs well with well-structured dishes of game, venison, red meats, beef in oil, braised meats, spit-roasted Brescian-style meat, and aged cheeses. Serve at 18°C-20°C, decant and aerate 20 minutes before serving.
