Peri - Pas Dosè Talent
Talent “Peri MB” Pas Dosè recalls in its name the signature on the first vintage produced in 1980. Made from 100% Chardonnay grapes, it is aged on the lees for at least 48 months. A austere and vertical wine, with great personality.
TALENTO identifies the excellence of quality Italian Sparkling Wines. The base wine for sparkling, according to the Classic Method, comes from prematurely harvested Chardonnay grapes to maintain a higher level of acidity that allows the wine to withstand the long processing period.
The vinification is carried out separately and using slow-fermentation yeasts in steel barrels kept at a controlled temperature between 18° and 22°C.
By the following spring, the tirage begins, the long and delicate phase of sparkling and maturation for the wine, which, already bottled, is laid to rest in stacks kept in the dark of the cellar. The constant temperature of 11°-12°C encourages the slow work of the selected yeasts that transform the residual sugar into alcohol and natural carbon dioxide: the perlage.

TASTING NOTES A dry wine, with significant and persistent bubbles. The nearly 5 years of aging make the wine soft, structured, and elegant. A lively and full bouquet, rich, harmonious, and persistent, with notes of hazelnut and dried fruit.
On the palate, it is decidedly dry, savory, fresh, with hints of peach, apricot, and yellow apple.
PAIRINGS It pairs perfectly with seafood dishes, ideal with raw seafood, excellent with appetizers.
