PRODUCTION METHOD: The oil is extracted using continuous cycle machines at 23° temperature
TOTAL ACIDITY: From very fresh and perfect olives, a very low acidity oil is obtained (0.1% 0.2%)
AROMA: Intense herbaceous aromas accompanied by hints of artichoke and aromatic herbs
FLAVOR: Reveals a good structure with persistent spiciness and bitterness
PAIRING: Raw, it is particularly enhanced with bruschetta and raw vegetables.
