Honey is produced by bees collecting nectar or other plant secretions found on the living parts of flowers and plants.
Honey remains liquid for a short time after its extraction, then it condenses more or less quickly depending on its botanical origin. Honey contains various substances from the flowers that provided the nectar, giving it unique characteristics in terms of composition, taste, and other sensory qualities.
Honey is called polyfloral (wildflower) or monofloral depending on the origin and timing of the collection: in the first case, the honey comes from multiple plant species without a predominant one or with a slight predominance; in the second case, these are honeys exclusively or for a high proportion from a single plant species.
